Job Summary:

We’re seeking a Director of New Brand Operations to lead the development and launch of a new Mexican taqueria concept at Sun Holdings. This high-impact role requires a balance of creativity, culinary authenticity, and operational expertise to bring a new restaurant brand to market and position it for long-term success. The right candidate will have direct experience opening and operating taco-focused or Mexican restaurant concepts and the vision to scale a new brand from the ground up.

What You’ll Do (Responsibilities):

As Director of New Brand Operations, you will own the end-to-end development and launch of Sun Holdings’ new Mexican taqueria concept. You’ll define brand positioning, develop authentic and innovative menus, and establish guest experience standards. This role includes providing input on site selection, collaborating on restaurant design, and driving operational readiness. You will oversee pre-opening activities, including staffing, training, and vendor partnerships to ensure a successful launch. Once live, you’ll transition the concept into scalable operations with a focus on profitability, consistency, and sustainable growth, while keeping ahead of industry and cultural trends to ensure authenticity and innovation.

What You’ll Bring (Requirements):

  • 5–10 years of progressive leadership experience in restaurant operations.
  • Proven track record in opening and operating taco-focused or Mexican restaurant concepts.
  • Strong balance of creativity and operational discipline—able to innovate while executing with excellence.
  • Experience working across functions (culinary, marketing, training, finance) to launch new concepts.
  • Entrepreneurial spirit with the ability to build from the ground up while planning for scale.
  • Spanish language proficiency preferred but not required.
